Chicken and dumplings

My grandmom lived with us and did most of the cooking until I was old enough to help (my mom worked). She made a killer chicken and dumplings. I remember her mixing up the dough and dropping it on top of the boiling chicken stew.
I found a shortcut recipe using canned cream of chicken soup, but did it up the same way as my grandmom.
My son doesn't like it, so I don't make it. What a shame.
My grandmom made great chili and pot roast too.

    I LOVE Chicken and Dumplings. Here's the basic recipe I use. I usually tweak it with some herbs or whatever else strikes my fancy at the time.

    Chicken & Dumplings

    1 chicken, cut into quarters
    1 Tbsp. chicken seasoning
    2 cups flour
    3 Tbsp. baking powder
    1 cup whole milk
    2 tsp. lard or vegetable shortening
    1 egg beaten
    1 tsp. salt

    Boil chicken in enough water to cover, along with chicken seasoning, until meat can easily be removed from bones . Place meat back into cooking liquid. Mix remaining ingredients to form a dough and spoon into boiling chicken pot liquor.
    Cover pot and simmer until dumplings are cooked.

    my grandmother also taught me her recipe for chicken n dumplings. its pretty much the same, except i just make my dumplings from 3 cups flour, dash of white pepper, and enough water to make a good pliable dough. and we roll ours out and cut into strips.

    i love the fact that my grandmother passed on her prized recipes (i also got the rice pudding recipe!!! lol) and that i can now pass them on to my kids.
