Great time of year to get out the zucchini bread and pancake recipes. Let's not even get to how many tomato recipes there are for right out of the garden pickings.
I started growing eggplant a few years ago and make a killer eggplant parmigiana. I have an eggplant in the frig now to make some, but it's just not the same as using the ones I grow.
Copp's squash casserole sounds perfect too!

Re: Summer produce
Tue, June 27, 2006 - 1:25 PMHey, nothing beats summer produce. I just made a great salad, last week, for "my girls" that included fresh romaine lettuce, slices of zucchini, little cubes of colby jack cheese and lots of fresh strawberries sliced and sprinkled about. I mixed some honey mustard and ranch dressing (about 1:2 respectively) and drizzled a little over each serving. Wow. We sent some down to the in-laws and they requested that I make it again for a family dinner on Sunday.
