i made this killer casserole with fresh squash, ground meat and rice.
i used a loaf size pan, glass,
melted half a stick of butter in it,
put 1 cup of uncooked white rice in that
poured in 1 1/2 cups of water
placed a layer of fresh squash on top
layer 1 pd of browned ground beef next (which really isnt that much once its browned; drained)
and then the rest of the squash on top
cover it; i used a 9 x 13 glass cake dish turned upside down on top; but you can use foil too.
now i have a gas oven so it takes a bit longer than electric
but i cooked mine for about an 1 hour and 20 minutes on 325' and it was delish!!
season how you like, but i didnt put anything but a couple of dashes of salt after i put it in my plate and it was great.

Sat, June 3, 2006 - 7:26 AMi used regular yellow squash, fresh, and they were medium/moderate sized.
i used 6, sliced in about 1/2 slices. you can adjust the squash amount wise. use less, maybe 4 or 5 if you prefer less squash.
